Grilled Yogurt Chicken with Lemon Zest

Here is an easy and simple marinade for chicken that’s especially delicious when cooked on the grill.  It combines plain Greek yogurt and lemon.  Sounds a little unusual?  Not really. Many cooks have been using dairy products, such as buttermilk, to tenderize chicken for years.  Buttermilk is a main ingredient in many fried chicken recipes as well.  Yogurt also makes a wonderful marinade, it really sticks to the chicken helping it to stay moist.  This recipe combines both the zest and juice of a lemon that adds a brightness and intensity of flavor.  Not only does my grilled yogurt chicken taste amazing, it requires very little prep time.  What more can you ask for?  Well, perhaps a second helping…

Here is how I did it!

Marinating your grilled yogurt chicken

Grab a container to marinate your chicken breasts.  I love using a 1 gallon sized plastic freezer bag for marinating.  It’s really about the convenience for me, no cleanup is necessary, just dispose of the used bag.

Salt and pepper both sides of your chicken breasts. Place the chicken breasts in your bag.  Add the Greek yogurt, lemon zest, and lemon juice.  Seal your freezer bag and massage it to mix all of your ingredients.  Refrigerate your chicken breasts at least 8 hours or overnight.

Cooking your grilled yogurt chicken

Preheat your grill on medium heat, the temperature should range 350 -400 degrees.  Cooking times vary depending on the size of your boneless chicken breast; a 4 oz. size breast cooks approximately 6-8 minutes per side while a 6-8 oz. breast cooks approximately10-15 minutes per side. Your grilled yogurt chicken is cooked when the center has no pink color and it should all be uniformly brown.

Place on a nice serving platter and garnish with lemon slices (optional) and parsley (optional).

  • 3 lbs. of boneless chicken breasts (6 pieces)
  • 1 tsp. kosher salt
  • ½ tsp. pepper
  • 1 cup plain Greek yogurt

  • bunch of fresh parsley (optional)
Instructions
