Almond Cranberry Chocolate Bark

I love chocolate and this is the time of year to splurge a bit.  My almond cranberry chocolate bark is easy and fun to make.  It’s a great recipe to make with kids too; I had a great time making it with my son.  The idea for making chocolate bark is simple… melt chocolate, spread it on a pan, cover it with toppings and let it harden.  It couldn’t be easier.

My recipe includes almonds, cranberries, and M&M’s… yours can be whatever you want.  This easy guideline is all you need for 12 oz. of chocolate chips:

1.  1/2 cup Crunchy top – you can use any nuts here or combination of whatever you like.

2.  1/2 cup Chewy top – you can use any dried fruit here or any combination you like as well.

3.  1/2 cup Candy top – This is where you can have some fun.  Use your favorite candy, trail mix, or just chop up your favorite candy bar.

Here is how I did it!

Grab a half sheet pan and line with tinfoil or parchment paper.  Measure out your almonds, dried cranberries, & M&M’s.  Your toppings need to be ready when needed.  Set aside.

Gab a medium glass bowl and add your package of semi-sweet chocolate chips.  It’s important to use only dry bowls and utensils when melting chocolate since water will cause your chocolate to seize.  In other words, it gets lump and thick and totally unusable.

Microwave your chocolate chips at power level 7 for 40 seconds, remove and stir chocolate chips.  Repeat a second time.  Your chocolate chips should be melting.

Microwave your chocolate chips at power level 7 for 25 seconds, remove and stir chocolate chips.  Repeat until your chocolate chips are almost all melted.  I just needed to do this step twice.  Don’t try to overdo this process or you will ruin your chocolate.  It’s amazing how stirring the chocolate between microwaving actually speeds the melting process; it melts more evenly too.  The entire melting process takes only 2-3 minutes of microwaving.

Grab a rubber spatula and pour the chocolate onto your half sheet pan.  Use your spatula to spread it out into any rough shape that’s about 1/4″ thickness.

Start adding your toppings all over your chocolate.  Have fun, this is the easy part.  Once your finished then lightly press the toppings down to move them into your chocolate.  It helps so less falls off later.

Set your almond cranberry chocolate bark aside at room temperature for at least 3-4 hours for the chocolate to harden.  It needs to be in a cool spot or you may need to place it in your refrigerator for 30 minutes.

Break your almond cranberry chocolate bark into pieces any size you choose and you’re finished.  Store in a sealed container at room temperature for 1 week.
