Baked Brie with Cranberry and Rosemary

New Year’s Day…a time for reflecting on the past; contemplating new objectives; resolving to accomplish those things we deem to be most important in our lives.  There is a lot to think about at the dawn of a new year, but one thing’s for sure, you won’t have to give a thought to your next appetizer – it is right before your eyes!

My baked brie recipe solves many of your entertaining goals.  It offers a complexity and decadence in flavors and textures. It allows for a beautifully creative and versatile presentation. It can be easily transported to any venue and served warm or cold.  Want more?  The ingredients are easy to find and preparation is a breeze!  Now how is that for a start to the New Year?

Here is how I did it!

Preheat your oven to 400 degrees.

Filling

In a small bowl combine dried cranberries, roasted pecans, honey, rosemary, cinnamon, nutmeg, and pepper.  Mix well and set aside.

Note:  Roast your pecans on an 11″ x 17″ sheet pan in a single layer at 425 degrees for 5 minutes.

Brie wheel

Sprinkle your work area and rolling pin with flour.  Open up your sheet of puff pastry dough and roll to a 15″x 13″ size.  Use flour as necessary to prevent your dough from sticking.  Trim 2″ from the 15″ length and set aside.  You should now have a 13″ square puff pastry sheet.  Add your filling to the center of your pastry sheet; keeping your filling piled within the same diameter of your brie wheel.  Place brie wheel on top of your mixture.  Brush corners of pastry dough with egg wash and fold the pastry dough over your brie wheel to seal completely removing excess dough.

Grab an 11″ x 17″ sheet pan and place a sheet of parchment paper on top.  I always love an easy cleanup!  Carefully pick up your brie wheel and flip over so it is seam side down on your sheet pan.  This is the time to take your 2″ pastry dough sheet and cut out your awesome decorations.  Use cookie cutters, pastry cutters or anything else at your disposal.  Have fun with this part and be creative!  Brush the top with your egg wash and bake at 400 degrees for 15 to 20 minutes.  You want your baked brie to brown nicely, so keep an eye on it.  Let stand 10 minutes before serving.  This is your time to decorate and get some crackers ready.

Ingredients
Filling
  • ½ cup chopped dried cranberries (plus more whole pieces for decorating)
  • ¼ cup chopped roasted pecans
  • ⅓ cup honey
  • 1 tsp. diced rosemary (plus more whole pieces for decorating)
  • ½ tsp. ground cinnamon
  • ¼ tsp. fresh ground pepper
  • pinch of ground nutmeg
Brie wheel
  • ½ package (1 sheet) frozen puff pastry dough (17.3 ounces) , defrosted
  • flour for rolling out the pastry dough
  • Brie wheel (approximately 1 lb.)
  • 1 egg, beaten
Instructions

  3. Grab an 11" x 17" sheet pan and place a sheet of parchment paper on top.
  4. Carefully pick up your brie wheel and flip over so it's seam side down on your sheet pan.
  5. Cut and create your decorations from your 2" pastry dough strip and place on your brie wheel.
  6. Brush the top with your egg wash and bake at 400 degrees for 15 to 20 minutes. You want your baked brie to brown nicely, so keep an eye on it.
  7. Let stand 10 minutes before serving. This is your time to decorate and get some crackers ready.
Notes
