Christmas Ravioli Pasta with Shrimp, Chicken, & Broccoli

The holidays are here, bringing you good cheer!  So what are you serving for dinner?  Might I suggest Christmas ravioli pasta?  I love this dish because it’s rich and decadent, the perfect choice for any holiday celebration.  When I first thought about pasta for dinner, I wanted to create something special; a bit different from the day to day pasta we eat.  Two things were important, first, it had to taste worthy of a holiday meal.  And second, it needed to look festive and colorful, and why not, I planned to serve it on Christmas!  Anything less would not be acceptable!  I’m happy to say that I was successful on both counts.  Christmas ravioli pasta has shrimp, chicken, and broccoli nestled in gourmet style ravioli with a rich cream sauce that embodies the dish in absolute indulgence. I topped my Christmas ravioli pasta with chopped fresh parsley and pomegranate seeds to complete the holiday presentation that I was eager to achieve.  I hope you will agree that my Christmas ravioli pasta fits your holiday dinner plans with both taste and style.

Here is how I did it!

Prepare the chicken

Preheat your oven to 350 degrees.

Grab a small sheet pan and line with tinfoil.  Place your chicken breast onto your pan and top with 1 tablespoon extra virgin olive oil, dried oregano, and kosher salt.

Bake for 36-40 minutes or until the chicken is cooked through with no pink color.  Cut into bite sized pieces and set aside.

Note: If you choose to make your chicken ahead, place into a container with a lid and store in the refrigerator for up to 4 hours until ready to use.  Just remove half an hour before using to return your chicken to room temperature.

Meanwhile, prepare the water for your pasta.  Grab an 8 qt. stock pot and fill two thirds with water to cook your pasta.  Heat water on medium-high to get the water to a gentle boil.  You want to make sure your pasta water is ready when you are!

Prepare the shrimp

Grab a 12″ fry pan and add your 2 tablespoons extra virgin olive oil.  Heat your pan on medium-high heat for 2 minutes then add your shrimp.  Cook your shrimp for 3 minutes per side.

Use tongs to turn your shrimp halfway through.  Move your shrimp around and cook in a single level for even cooking.   Make sure your shrimp is no longer translucent but pink, firm and cooked through.  Remove to a separate plate and set aside.

Prepare the cream sauce

Use the same 12″ fry pan and melt your butter over medium-high heat.  Add your white wine and boil to remove the brown bits of flavor and reduce in half.  This should only take a few minutes.  Add your minced garlic and stir for a minute.  Add your heavy cream, chicken, kosher salt & pepper.  Bring to a boil and reduce your heat to medium for 5 minutes, stirring occasionally.

Prepare the ravioli and broccoli (make sure your water is boiling)

Cook your fresh gourmet ravioli according to package directions.  It took 3 minutes for mine, so this part is going to be quick. Two minutes before the pasta is finished, add your broccoli.  They both cook together and finish together; it’s a time saver!  Drain and set aside.

Present your Christmas ravioli pasta

Set four plates and add 3-4 raviolis to each.

Add the Parmesan cheese to your cream sauce and stir to incorporate.  Add your shrimp and broccoli and mix to combine all ingredients.  Evenly portion the mixture onto the plates with the ravioli; making sure to add sauce onto your ravioli.

Top each dish with fresh chopped parsley.

Cut your pomegranate in half and using a fork, remove some seeds to garnish your Christmas ravioli pasta.

Ingredients
Prepare the chicken
  • 1 lb. boneless chicken breast
  • 1 tbsp. extra virgin olive oil

  • 1 lb. large shrimp

  • 3 tbsps. butter

  • 1-1/2 cups heavy cream
  • ½ tsp. kosher salt
  • ¼ tsp. Fresh ground pepper
Prepare the ravioli and broccoli
  • 9-12 oz. fresh gourmet ravioli (any type will do, I used crabmeat)
  • 1 head of broccoli

  • 1 tbsp. Chopped Fresh Parsley
  • 1 pomegranate (seeds only)
