Cranberry Orange Pecan Cookies from Scratch

And why not?  My recipe features some of the best flavors of fall merged into one mouth-watering cookie.  Cranberry orange pecan cookies have delicious dried cranberries, orange zest, and chopped pecans.  What’s not to love?

What I love the most about these cookies is their flavor combination of cranberry and orange.  I added dried cranberries and orange zest to the cookie dough and topped the warmed baked cookies with more dried cranberries.  It was just the right balance to capture both flavors while adding a bit of crunch with chopped pecans.  Not only do these cranberry orange pecan cookies taste amazing, but the look great too.

Making a batch of these cookies is easy, especially since you probably have most of these ingredients in your pantry already.  The recipe makes 24 cranberry orange pecan cookies which is the perfect amount to bring along as a special treat to share while enjoying your favorite seasonal outings.  Go on and give them a try. Here is how I did it!

Preheat your oven to 375 degrees.

Grab a medium bowl and combine your dry ingredients flour, baking soda, and kosher salt.  Set aside.

Grab your stand mixer fitted with a paddle attachment and add your softened unsalted butter, granulated sugar, and brown sugar.  Mix at low speed for 4 minutes to cream the mixture.  Halfway through increase your speed to medium to get the mixture creamy.  Add your vanilla, egg, and orange zest, and combine.  Turn your speed to stir, slowly begin adding your dry ingredients to incorporate them into your mixture.  Don’t over mix, this will result in dry and crumbling cookies.  Once complete turn off your stand mixer and stir in your pecans and 3/4 cup of your cranberries using a wooden spoon.

Grab two half sheet pans lined with parchment paper.  Grab two tablespoons and scoop the dough with the first one.  Use the second spoon to drop rounded balls of dough onto your half sheet pan.  The size of the balls should be about 1″ round.  Place your cookie dough drops about 1-1/2″ apart.  This will give your cranberry orange pecan cookies room to spread out as they bake.  You should be able to place 12 cookies per half sheet.

Bake for 9 – 11 minutes or until the bottom of your cookies brown.  Top your cookies with the remaining dried cranberries, making sure to place them snug in the cookie.  If not you may lose a few later.  Let your cranberry orange pecan cookies cool for 5 minutes before transferring them to a cookie rack to cool completely.
