Mini Stuffed Peppers with Beef and Rice Filling

Are you looking for something new and lively for an appetizer?  Well here’s a thought… why not try my mini stuffed peppers?  They are the perfect “bite-sized” version of the traditional Greek dish.  Packed with flavor and easy to eat, my mini stuffed peppers are a fun way to start any meal…a word of caution though; you may not want to stop!  Each mini pepper is filled with a savory beef and rice mixture, and then slowly cooked to perfection.  Whenever possible, try using a combination of red, green, yellow and orange peppers.  The festive colors will add pizzazz to your table… party anyone?

Here is how I did it!

Preparing your mini stuffed peppers

Cut around the tops of your peppers.  Wash their insides removing all seeds and most of the rib.  Set aside to dry.

Grab your 12″ fry pan and add 3 tablespoons of olive oil.  Heat your oil on medium high heat for one minute.  Add your onion and brown for 15 minutes.  You want to brown your onion not burn it, so watch the temperature and bring to medium if it cooks too fast.

Add your hamburger and brown it. It should take about 10 minutes.  Add your wine, whole crushed tomatoes, tomato paste, mint, kosher salt, and pepper.  Cook for about 15 minutes more to meld the flavors and cook out some of the juices.  Turn off the heat and add your rice.  Mix everything well and your ready to begin stuffing your peppers.

Take your hamburger mixture and begin stuffing your peppers.  Remember the rice still needs to cook so make sure it has some room to expand.  Place them in one or two baking dishes on a single layer drizzled with 4 tablespoons olive oil.  It’s ok if they fit snug, that’s what you want.

Note: Use a baking dish that has low sides, this helps the peppers brown.

Using the same fry pan you made the hamburger mixture, combine the tomato sauce and 2 cups water.  Warm the tomato sauce and water on medium heat for 5 minutes.  Pour mixture into the baking dishes, but fill no more than half way.

Cover and bake at 400 degrees for 50 minutes.  Remove cover and cook for another 30 minutes.  The peppers are cooked when they look collapsed and brown.

Place your mini stuffed peppers on a nice serving platter.

Ingredients
  • 3 containers of mini peppers ( choose assorted colors)
  • 7 tbsps. olive oil, divided
  • 1 large Spanish onion, chopped
  • 2 lbs. hamburger (85/15)
  • ½ cup red wine
  • 15 oz. can whole peeled tomatoes with juice, (crush the tomatoes by hand removing any tough pieces)
  • 2 tbsps. tomato paste
  • 1 tbsp. dried mint
  • 2 tsp. kosher salt
  • ¾ tsp. fresh ground pepper
  • ½ cup rice
  • 8oz can tomato sauce
  • 2 cups water
