The holiday season is here and it’s time to indulge your taste buds with homemade delights, family traditions and gourmet decadence.  This is certainly not the time of year to forsake your warmest heart’s desires… and assuredly, there are a lot of desirable foods to satisfy anything you crave.  If you love shrimp, and many of you do… then I have the perfect appetizer for you.  Try my rosemary roasted shrimp as a starter for your next celebration.  It’s an easy appetizer to make, but it certainly doesn’t present that way to your guests.  And why not, it’s not like you just defrosted a bag of frozen shrimp.  Rather, you spent the time roasting your shrimp to tasty perfection.  Your kitchen will be filled with the aromas of rosemary… a harbinger to your guests that the holidays are here!

Here is how I did it!

Preheat your oven to 400 degrees

Grab your 8″ x 8″ glass or ceramic baking dish and add the extra virgin olive oil and sprigs of rosemary.  Bake for 10 minutes to infuse the favors of the rosemary with the extra virgin olive oil.

Increase the oven temperature to 425 degrees.  Using a tongs, add the colossal shrimp to your pan.  Careful the oil is hot!  Gently toss the shrimp with the rosemary infused oil.  Sprinkle the top of your shrimp with the kosher salt.  Bake for 7-9 minutes or until the shrimp is pink, firm, and cooked through.

Note:  If you decide to use large shrimp, that’s fine too.

Remove the rosemary roasted shrimp from your oven and let sit for a few minutes.  Place the shrimp on a nice serving platter and discard the rosemary.

Serve your rosemary roasted shrimp with your favorite cocktail sauce.

Ingredients
  • 3 tbsps. extra virgin olive oil
  • 2 sprigs of rosemary
  • 1 lb. colossal shrimp (14-16 count), peeled, deveined with tails left on
  • ½ tsp. kosher salt
  • cocktail sauce (optional)
Instructions

Notes
If you decide to use large shrimp, that's fine too, just cut your cooking time by a minute.
