Sometimes all it takes is the right side dish to complete a meal.  And if you love sweet potatoes then I have the perfect recipe for you.  My thyme roasted sweet potatoes is an easy side dish to whip up when you need a tasty starch.  It’s flavorful and healthy, and a nice change from your traditional baked sweet potato.  And because it’s sliced, it cooks faster too.

What I love about my thyme roasted sweet potatoes is the method of cooking.  A high 450 degree temperature caramelizes the outside of the sweet potato so nicely.  And we all know this imparts so much flavor.  And it looks as good as it tastes.

Here is how I did it!

Preheat your oven to 450 degrees

Grab a medium bowl.  Slice your sweet potatoes into 1″ thick discs.  Place the sliced sweet potatoes in your bowl and combine them with the extra virgin olive oil, thyme, and kosher salt.  Mix everything well.  Place your sweet potatoes onto a half sheet pan.  Top your sweet potatoes with any thyme that’s left in the bowl.

Note: Don’t use glass to cook your thyme roasted sweet potatoes, you need a hot metal surface to help caramelize your potatoes.

Bake for 20 minutes and then turn your sweet potatoes.  Bake for an additional 20 minutes to finish.

  • 2 lbs. sweet potatoes, peeled
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh thyme
  • 1 tsp. kosher salt
