Cool and refreshing, colorful and vibrant, light and delicious… watermelon feta salad is sure to appeal to your dinner guests.  And why not, who doesn’t love watermelon?  It’s such a treat when fresh watermelons arrive at your local grocer; you know that summer is just around the corner.  So it’s time for a salad, although not just any salad… watermelon feta salad to be exact.  This salad is a nice change from the ordinary potato, bean, or pasta salads we love to eat.  Watermelon combines so well with feta cheese, I just added some mild red onion and mint and you have a unique combination of ingredients that will pleasantly surprise your taste buds.

What I love about watermelon feta salad is the mint.  Mint has a very aromatic and fragrant quality.  Its flavor is generally sweet, and it adds a cool and sometimes menthol sensation when eating it.  Mint combines very well with fresh fruit.  Just grab some fresh mint, roll it up, and slice into long thin pieces.*  A little fresh mint goes a long way.

*Cooking tip:  This technique is commonly referred to as “julienne”.

Here is how I did it!

Reduced balsamic dressing

Grab a 1 qt. saucepan.  Add the balsamic vinegar, honey, and orange rind.  Boil the mixture on medium heat until it reduces to 1/2 cup.  Don’t cover the mixture or you run the risk that it will boil over.  If the mixture begins to bubble too much then just reduce the heat a little.  The balsamic mixture will take about 15 minutes to reduce.  Remove the piece of orange rind set aside to cool.

Note: Turn your kitchen fan on high; this will reduce the vinegar smell as the mixture boils.

Watermelon feta salad

Combine the watermelon, red onion, and mint.  Mix well and place in a nice serving platter.  Top with feta cheese.  Garnish your watermelon feta salad with some sprigs of fresh mint (optional).

Note: Don’t mix the feta cheese into your watermelon, it will begin to disintegrate leaving a white film on you watermelon.  Although it’s still tasty, it just doesn’t look very appealing.

Serve the reduced balsamic dressing on the side.

Ingredients
Reduced balsamic dressing
  • 1 cup balsamic vinegar
  • 2 tbsps. honey
  • 2" square piece of an orange rind
Watermelon feta salad
  • 7 cups watermelon, cut into bite sized pieces (7-8 lb. whole watermelon)
  • ¼ cup red onion, diced
  • ¼ cup thinly sliced fresh mint leaves (just tightly roll pieces of mint leaves and thinly slice)
  • ¼ lb. feta cheese, cut into small bite-sized pieces.
  • sprigs of fresh mint (optional)
Instructions

  3. Cool to room temperature and set aside.
Watermelon feta salad
  1. Combine the watermelon, red onion, and mint. Mix well and place in a nice serving platter.
  2. Top with feta cheese. Garnish your watermelon feta salad with some sprigs of fresh mint (optional).
  3. Serve the reduced balsamic dressing on the side.
