Baked Lemon Haddock with Herb Seasoned Croutons

Dinner is ready, have you had your haddock lately?  I love haddock, and baked lemon haddock is a delicious way to enjoy these fillets.  Take plain fillets and dress them up with breading and lemon juice. You’ll note that I didn’t use just ordinary breadcrumbs for this recipe; I used herb seasoned croutons to make the fish extra tasty. They’re the same croutons I have been using in my salads for years, but they add a nice balanced flavor to this dish. Just crush up the herb croutons and bread your haddock fillets with the crumbs.  It couldn’t be simpler.

The key to my baked lemon haddock is the use of lemon.  After the haddock comes out of the oven make sure to squeeze lemon over each and every piece.

Here is how I did it!

Preheat your oven to 375 degrees.

Grab a quarter sheet pan and line it with tinfoil.

Set up your breading station.  In one small bowl add your milk, and in another small plate add your crushed croutons.

Note:  I crushed my croutons by placing them in a plastic sandwich bag, removed the air and sealed.  I then placed the bag on a cutting board, and used a heavy rolling pin to crush and roll the pieces into crumbs.  You can always use a food processor to turn croutons into crumbs.

When purchasing your haddock fillets just ask your grocer to remove the skin.  This is a great timesaver and something you want to avoid when possible.  Dip your haddock fillets one at a time into the milk and then the crushed croutons.  Move your haddock fillets to thoroughly coat them in your croutons.  Place your breaded haddock fillets on the quarter sheet pan and repeat.  Top the finished breaded haddock fillets with more crushed croutons if any leftover crumbs exist.

Bake your haddock fillets for 18 minutes.  When the haddock fillets come out of the oven make sure to squeeze a slice of lemon over each piece.  Place your baked lemon haddock onto a nice serving platter and garnish with more lemon slices (optional).

  • 1 lb. haddock fillets, skin removed
  • ½ cup milk
  • 1 cup herb seasoned croutons, crushed
