Want to make fun and colorful dish for fall?  Try my roasted orange cauliflower as a side for your next meal.  Don’t let the color fool you, it’s cauliflower alright, and the orange hues make it perfect for all of your autumnal festivities.  When shopping for your own orange cauliflower,  you may find that the coloration varies from one head of the vegetable to the next. What makes this variety of cauliflower orange?  It’s the extra beta-carotene that’s naturally stored in its florets.  The difference is that orange cauliflower provides more vitamin A compared to its pale white counterpart; and that’s a great thing.  I’ll bet even your kids will want to give it a try!

Orange cauliflower is available in autumn, so check out your local grocer for this colorful and healthy alternative.  It sure will spark some conversation at the dinner table.

Here is how I did it!

Preheat your oven to 425 degrees

Trim your head of cauliflower and cut into bite sized pieces.  Place your cut cauliflower onto a half sheet pan.

Grab a small bowl and combine your extra virgin olive oil, lemon juice, garlic, kosher salt, and pepper.  Mix well and pour evenly over your cauliflower.  Toss and mix everything on your half sheet pan.

Bake for 20 minutes.  Transfer your roasted orange cauliflower onto a nice serving platter.  Sprinkle with parmesan cheese and slices of lemons.

Ingredients
  • 2lb. head of Orange cauliflower
  • 3 tbsps. extra virgin olive oil
  • 1 tbsp. fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp. kosher salt
  • ¼ tsp. fresh ground pepper
  • 2 tbsps. grated parmesan cheese
  • 1 lemon half, sliced
Instructions
