Sliced Tomatoes on Toasted French Baguette

I love tomatoes, especially when they are freshly home grown.  When you start with great flavor it only requires an easy recipe and a few ingredients to capture and enjoy a rich tasting experience.  My good friend Felecia shared with me a delicious appetizer idea that is sure to fulfill your love of tomatoes.  It’s easy to prepare with just a few simple ingredients.  Sliced tomatoes are sautéed in oil infused with garlic.  Add crispy thick slices of French baguette and basil, and you’ll have an amazing flavor combination your guests will absolutely love!  I definitely encourage you to try this recipe.

Here is how I did it!

Preheat your oven to 450 degrees.

Grab your half sheet pan and line with parchment paper.  Slice your French baguette into 1″ thick slices and place onto the half sheet pan.  Combine 1/4 cup of extra virgin olive oil and dried oregano.  Mix well and baste the tops of your French baguette slices.  Bake for 8-10 minutes or until your bread is toasted golden brown and crispy.  Set aside.

Note: you can prepare your toasted French baguette slices 1 hour ahead.

Grab your 10″ cast iron fry pan.  Heat your oil on medium heat for 2 minutes.  Add your garlic and cook for 1 minute.  Start adding your sliced tomatoes, you will need to cook them in batches.  Sauté the sliced tomatoes 3-4 minutes on each side.  You want to soften and warm the slices, though not too much or the tomato will start to break apart and become mushy.  Transfer the cooked sliced tomatoes onto a plate and continue with the next batch until finished.

Grab a large serving platter and place your French baguette slices.  Top your toasted baguette pieces with the sliced tomatoes.  Don’t waste the garlic infused oil that you used to sauté your tomatoes.  Pour it over your sliced tomatoes to add some additional flavor.  Top with your sliced basil and you’re ready to enjoy!

Ingredients
  • French baguette with sesame seeds (24" in length)
  • ½ cup of extra virgin olive oil, divided
  • 1 tsp. dried oregano
  • 5 vine ripe tomatoes, sliced ⅓" thick
  • 2 cloves of garlic, finely chopped
  • ¼ cup basil loosely packed, julienne slice
Instructions
  1. Preheat your oven to 450 degrees.
